  • Mini Caramel Apple Favors

    One of my favorite things of fall is Caramel Apples.  And I think mini caramel apples would make the cutest favors and accents to your cocktail hour.   And if you are hosting a fall get together, try making these for your friends, I am positive you will have none left by the time everyone leaves!

    How to make your own Caramel Apples:

    You will need lollipop sticks, granny smith apples,  a melon baller,  caramel, and any other topping you want to put on there.

    Take the apple and use the melon baller to scoop out a ball of apple.  Make sure some peel is on the end, as that is what you will stick the lollipop stick through.  Once attached to the stick, you can dip the apples in any combination of toppings that you desire.  Place on wax paper to dry, or in paper candy cups, and then later you can tie bags around each one if a favor or leave out for guests on decorative platters.

    I just love fall!

  • Tasty Summer Appetizer

    Last night we had a trivia night at a local hall to raise money for a family here in St. Louis. One of their triplets, Megan, needs a bone marrow transplant at some point in her life as her white blood cells are basically non-existent.  She is not even a year old and has spent numerous days in the hospital.  This family has been through a lot, and I was glad to see such a great turnout of people to support them.  Lots of great sponsors for the trivia night silent auction, and hopefully that raised enough money to send Megan to a specialist on the East Coast, along with all the other trivia games played throughout the night.

    There was a lot of love in the room, and also a lot of food.  Our table brought some great goodies, and I tried making something brand new for us.  These are mini-BLT’s and they were a HUGE hit.  They are easy to make and take only a few ingredients.

    Materials:
    Sourdough Bread
    Thick Cut Bacon
    Cherry Tomatoes
    Green Lettuce
    Mayonnaise
    Salt and or/Pepper
    Prepare the Bacon as desired.  You will not want this to be “extremely crunchy” bacon so that the toothpick can go through.  Cut the crusts off the sourdough bread and slice into four pieces.  Place the cut pieces of bread on a baking sheet and toast until golden brown.  While toasting, begin preparing other ingredients for assembly.  You will need to slice the bacon in about 3-4 pieces per slice, cut the cherry tomatoes in half, and start tearing the green lettuce into small squares.
    When the bread is done, take out of the oven and allow to cool completely.  Once cooled, spread mayonnaise on the slice of bread. Layer it with bacon, lettuce, and cherry tomato and hold together while putting toothpick through it all.

    And that is a mini-BLT!  Just note that the tomato is cut in half so the guest can enjoy it on a second bite if so desired!

  • Refreshing Mojito Recipe

    In honor of our Carribean Chic Wish Upon a Wedding Launch party tonight let me introduce you to the raspberry mojito.

    Did your mouth just go dry?  Good… because this drink is worth mixing up on a warm summer day to quench your thirst.  Who can resist fresh raspberries and a refreshing mint drink on a day where the weather (and humidity) is way beyond cool?!  To me this is the to die for combination.  Mint + Raspberries = pure happiness.

    Raspberry Mojito
    Makes 1 serving

    8 fresh mint leaves
    1/2 ounce freshly squeezed lime juice
    1 teaspoon superfine sugar
    2 ounces white rum
    2-3 ounces seltzer
    4-6 fresh raspberries

    - Place mint leaves, lime juice and sugar in a highball glass and use the straight end of a wooden spoon to gently press on  leaves to release the flavor.

    - Fill glass with ice cubes. Pour in rum. Top off with seltzer. Drop in raspberries, and sip!

    Look out summer margaritas, this raspberry mojito just may take your place!
